Ingredients

- 2 cups cooked corned beef, diced
- 2 cups potatoes, peeled and diced
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 eggs (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes and cook until they are golden brown and tender.
- Stir in the diced corned beef and cook until heated through.
- Season with salt and pepper to taste.
- If desired, fry eggs in a separate pan to serve on top of the hash.

- For extra flavor, add bell peppers or spices.
- Leftover corned beef works best for this recipe.
