Description

A delicious and hearty breakfast option made with corned beef and potatoes.


Ingredients

  • 2 cups cooked corned beef, diced
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 eggs (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the diced potatoes and cook until they are golden brown and tender.
  4. Stir in the diced corned beef and cook until heated through.
  5. Season with salt and pepper to taste.
  6. If desired, fry eggs in a separate pan to serve on top of the hash.
