- 3-4 medium potatoes, diced
- 1 onion, diced

Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced onions and cook until translucent.
- Add the diced potatoes and cook until they are tender and golden brown, about 10-15 minutes, stirring occasionally.
- Add the diced corned beef to the skillet, mix well, and cook until heated through and slightly crispy.
- Season with salt and pepper to taste.
- Serve hot, with optional fried or poached eggs on top if desired.
Notes
For extra crunch, let the potatoes sit without stirring for a few minutes during cooking. Can be stored in an airtight container in the fridge for leftovers.
