Description

A light and fluffy bread made with cottage cheese and blueberries, perfect for a healthy snack or breakfast.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese and eggs, and mix until smooth.
  3. Add almond flour, baking powder, and salt to the mixture, and stir until well combined.
  4. Gently fold in the blueberries.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Let it cool before slicing and serving.

  • For a sweeter bread, consider adding a tablespoon of honey or maple syrup.
