Ingredients

- 1 cup cottage cheese
- 3 large eggs
- 1/4 cup almond flour
- 1/4 cup blueberries
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese and eggs, and mix until smooth.
- Add almond flour, baking powder, and salt to the mixture, and stir until well combined.
- Gently fold in the blueberries.
- Pour the batter into a greased loaf pan.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Let it cool before slicing and serving.
Notes
- For a sweeter bread, consider adding a tablespoon of honey or maple syrup.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
