Description

A delicious and healthy bake featuring cottage cheese and a variety of vegetables.


Ingredients

  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped zucchini
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, spinach, bell peppers, zucchini, and Parmesan cheese.
  3. In a separate bowl, whisk the eggs, garlic powder, onion powder, salt, pepper, and oregano.
  4. Pour the egg mixture into the cottage cheese and veggie mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  7. Let it cool for a few minutes before serving.
