Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon minced garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix the softened butter, parsley, garlic, smoked paprika, salt, black pepper, and lemon juice until well combined.
  3. Husk the corn and remove all silk.
  4. Spread the cowboy butter mixture generously over each ear of corn.
  5. Wrap each ear of corn in aluminum foil.
  6. Place the wrapped corn on the grill and cook for 15-20 minutes, turning occasionally.
  7. Remove from the grill, unwrap, and serve hot.

Notes

  • For extra flavor, add a pinch of cayenne pepper to the butter mixture.
