A delicious recipe for summer grilling featuring sweet corn slathered in cowboy butter.
Ingredients

- 4 ears of fresh corn
- 1/2 cup unsalted butter, softened
- 2 tablespoons chopped fresh parsley
- 1 tablespoon minced garlic
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix the softened butter, parsley, garlic, smoked paprika, salt, black pepper, and lemon juice until well combined.
- Husk the corn and remove all silk.
- Spread the cowboy butter mixture generously over each ear of corn.
- Wrap each ear of corn in aluminum foil.
- Place the wrapped corn on the grill and cook for 15-20 minutes, turning occasionally.
- Remove from the grill, unwrap, and serve hot.
Notes
- For extra flavor, add a pinch of cayenne pepper to the butter mixture.
- Can be made ahead of time and stored in the refrigerator before grilling.
