- 2 – 15 oz. cans black-eyed peas (drained and rinsed)
- 1 – 15 oz. can sweet corn kernels (drained)
- 1 cup red bell pepper (chopped)
- ¼ cup purple onion (diced)
- 1 Tbsp. serrano pepper (finely diced)
- 2 Tbsp. olive oil
- 2 Tbsp. lime juice
- ½ tsp. salt
- ¼ tsp. black pepper
- ½ cup cilantro leaves (coarsely chopped)
Instructions
- Combine peas and veggies. In a medium-sized bowl, combine black-eyed peas, corn, bell pepper, onion, and serrano pepper.
- Prepare the dressing. In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour over the black-eyed pea mixture.
- Add the cilantro and adjust seasonings. Fold in cilantro and adjust seasonings to taste.
- Chill cowboy caviar in the fridge until ready to serve.
Notes
Let the dip marinate for an hour before serving for better flavor.
