Description

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup crushed tortilla chips (for coating)

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, black beans, corn, red onion, cilantro, garlic powder, cumin, salt, and pepper.
  2. Mix until all ingredients are well combined.
  3. Form the mixture into a ball shape and wrap it in plastic wrap.
  4. Refrigerate for at least 2 hours to firm up.
  5. Once chilled, roll the cheese ball in crushed tortilla chips until fully coated.
  6. Serve with additional tortilla chips or crackers.
