- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup crushed tortilla chips (for coating)
Instructions
- In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, black beans, corn, red onion, cilantro, garlic powder, cumin, salt, and pepper.
- Mix until all ingredients are well combined.
- Form the mixture into a ball shape and wrap it in plastic wrap.
- Refrigerate for at least 2 hours to firm up.
- Once chilled, roll the cheese ball in crushed tortilla chips until fully coated.
- Serve with additional tortilla chips or crackers.
Notes
- For a spicier version, add more jalapeños or use spicy cheese.
- This cheese ball can be made a day in advance.
