Description

A hearty and flavorful casserole combining cornbread with savory ingredients for a delicious meal.


Ingredients

  • 1 package cornbread mix
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 pound ground beef or turkey
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Add the onion, bell pepper, chili powder, cumin, salt, and pepper to the skillet. Cook until vegetables are tender.
  4. In a large bowl, combine the cornbread mix, black beans, corn, diced tomatoes, and half of the cheese.
  5. Stir in the cooked meat and vegetable mixture.
  6. Pour the mixture into a greased baking dish and top with the remaining cheese.
  7. Bake for 25-30 minutes or until the cornbread is golden brown and cooked through.
  8. Let cool for a few minutes before serving.

Notes

  • Feel free to add jalapeños for extra heat.
  • This dish can be made ahead of time and reheated.
  • Serve with sour cream or avocado for added creaminess.
