- 1 package cornbread mix
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 pound ground beef or turkey
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add the onion, bell pepper, chili powder, cumin, salt, and pepper to the skillet. Cook until vegetables are tender.
- In a large bowl, combine the cornbread mix, black beans, corn, diced tomatoes, and half of the cheese.
- Stir in the cooked meat and vegetable mixture.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Bake for 25-30 minutes or until the cornbread is golden brown and cooked through.
- Let cool for a few minutes before serving.
Notes
- Feel free to add jalapeños for extra heat.
- This dish can be made ahead of time and reheated.
- Serve with sour cream or avocado for added creaminess.
