Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheddar cheese
  • 1 cup cream cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the diced onion and bell pepper to the skillet and sauté until softened.
  3. Stir in the diced tomatoes, black beans, corn, garlic powder, chili powder, salt, and pepper.
  4. Reduce heat to low and add the cream cheese, stirring until melted and combined.
  5. Gradually add the shredded cheddar cheese, stirring until fully melted and creamy.
  6. Serve warm with tortilla chips or fresh vegetables.

Notes

  • For a spicier dip, add jalapeños or hot sauce.
  • This dip can be made in a slow cooker for easy serving.
