Ingredients

  • 8 oz pasta of choice
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp sage, dried
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat a bit of olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the pumpkin puree, heavy cream, sage, nutmeg, salt, and pepper to the skillet. Stir to combine and let simmer for about 5 minutes.
