  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh rosemary for garnish

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix together the cranberry sauce, balsamic vinegar, brown sugar, minced garlic, salt, and pepper.
  3. Place the beef roast in a roasting pan and pour the cranberry balsamic mixture over the top.
  4. Cover the pan with aluminum foil and roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches your desired doneness.
  5. Remove the foil for the last 30 minutes of cooking to allow the roast to brown.
  6. Once done, let the roast rest for 10-15 minutes before slicing.
  7. Garnish with fresh rosemary before serving.
