- 3–4 lbs beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh rosemary for garnish
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix together the cranberry sauce, balsamic vinegar, brown sugar, minced garlic, salt, and pepper.
- Place the beef roast in a roasting pan and pour the cranberry balsamic mixture over the top.
- Cover the pan with aluminum foil and roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches your desired doneness.
- Remove the foil for the last 30 minutes of cooking to allow the roast to brown.
- Once done, let the roast rest for 10-15 minutes before slicing.
- Garnish with fresh rosemary before serving.
Notes
- For a sweeter flavor, add more brown sugar to the sauce.
- Serve with mashed potatoes or roasted vegetables for a complete meal.
- This recipe can be made a day in advance and reheated before serving.
