Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup fresh cranberries
  • 1/2 cup lemon juice
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1/4 cup all-purpose flour (for filling)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup flour, 1/2 cup butter, 1/4 cup sugar, and salt. Mix until crumbly.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  4. Bake for 15 minutes or until lightly golden.
  5. In another bowl, whisk together the lemon juice, 1 cup sugar, eggs, and 1/4 cup flour until smooth.
  6. Fold in the cranberries and pour the mixture over the baked crust.
  7. Bake for an additional 25-30 minutes until set.
  8. Allow to cool completely before cutting into bars.
  9. Dust with powdered sugar before serving.

Notes

  • For a more intense lemon flavor, add lemon zest to the filling.
  • These bars can be stored in the refrigerator for up to a week.
