Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup fresh cranberries
- 1/2 cup lemon juice
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1/4 cup all-purpose flour (for filling)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup flour, 1/2 cup butter, 1/4 cup sugar, and salt. Mix until crumbly.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together the lemon juice, 1 cup sugar, eggs, and 1/4 cup flour until smooth.
- Fold in the cranberries and pour the mixture over the baked crust.
- Bake for an additional 25-30 minutes until set.
- Allow to cool completely before cutting into bars.
- Dust with powdered sugar before serving.
Notes
- For a more intense lemon flavor, add lemon zest to the filling.
- These bars can be stored in the refrigerator for up to a week.
