- 2 cups corn (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and chili powder.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- In a bowl, mix together the corn, mayonnaise, sour cream, lime juice, cilantro, and half of the cotija cheese.
- Once the chicken is cooked, top each breast with the corn mixture.
