- 1 cup orzo pasta
- 2 cups butternut squash, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced butternut squash and cook for about 5 minutes.
- Stir in the orzo pasta and vegetable broth, bring to a boil.
- Reduce heat and simmer for 10-12 minutes, or until the orzo is cooked and the squash is tender.
- Stir in the heavy cream, and season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- For a vegan version, substitute heavy cream with coconut cream.
- Feel free to add spinach or kale for extra nutrition.
