Description

A hearty and flavorful soup that combines the richness of cream with the robust flavors of cowboy-style ingredients.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the black beans, corn, diced tomatoes, and beef broth.
  4. Season with chili powder, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 15 minutes.
  6. Stir in the heavy cream and heat through.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
