Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and chicken broth, bringing to a boil.
  3. Reduce heat and simmer until potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream, cheddar cheese, and crumbled bacon.
  6. Season with salt and pepper to taste.
