Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the chicken broth, carrots, celery, onion, garlic, and Italian seasoning.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove the chicken, shred it, and return it to the crockpot.
  5. Add the gnocchi, heavy cream, and spinach to the crockpot.
  6. Cook for an additional 30 minutes on high until the gnocchi is tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream.
  • Feel free to add other vegetables like peas or corn for extra flavor.
