Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups spinach
  • Fresh basil for garnish


Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a simmer over medium heat.
  3. Add the meatballs to the simmering broth and cook for about 10 minutes, or until they are cooked through.
  4. Stir in the heavy cream and diced tomatoes, and let it simmer for another 5 minutes.
  5. Add the spinach and cook until wilted.
  6. Serve hot, garnished with fresh basil.
