- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can diced tomatoes (14.5 oz)
- 2 cups spinach
- Fresh basil for garnish
Instructions
- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a simmer over medium heat.
- Add the meatballs to the simmering broth and cook for about 10 minutes, or until they are cooked through.
- Stir in the heavy cream and diced tomatoes, and let it simmer for another 5 minutes.
- Add the spinach and cook until wilted.
- Serve hot, garnished with fresh basil.
Notes
- For a lighter version, you can use ground turkey instead of beef.
