Ingredients

  • 1 cup gnocchi
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the diced chicken until browned.
  2. Add minced garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the gnocchi and cook until they float to the top.
  5. Stir in the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning.
  6. Simmer for 5-7 minutes until the soup thickens.
  7. Stir in the Parmesan cheese and season with salt and pepper.
