- 1 cup gnocchi
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, sauté the diced chicken until browned.
- Add minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Add the gnocchi and cook until they float to the top.
- Stir in the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning.
- Simmer for 5-7 minutes until the soup thickens.
- Stir in the Parmesan cheese and season with salt and pepper.
- Serve hot and enjoy!

- For a lighter version, substitute heavy cream with half-and-half.
