Ingredients

  • 1 cup coconut milk

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the pumpkin puree, vegetable broth, coconut milk, ginger, and cinnamon to the pot.
  3. Bring the mixture to a simmer and cook for about 15 minutes.
  4. Use an immersion blender to puree the soup until smooth.
