  • 1 cup brewed coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice. Whip until smooth and creamy.
  2. In a shallow dish, mix the brewed coffee and coffee liqueur.
  3. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  4. Layer half of the soaked ladyfingers in the bottom of a serving dish.
  5. Spread half of the pumpkin mascarpone mixture over the ladyfingers.
  6. Repeat the layers with the remaining ladyfingers and pumpkin mixture.
  7. Cover and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, dust the top with cocoa powder.
