A delightful recipe for creamy shrimp enchiladas that seafood lovers will adore.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups sour cream
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and add shrimp, cooking until pink.
  3. Stir in garlic powder, onion powder, salt, and pepper.
  4. In a bowl, mix sour cream and half of the cheese.
  5. Fill each tortilla with shrimp mixture and a spoonful of the sour cream mixture, then roll them up.
  6. Place the rolled tortillas in a baking dish and pour enchilada sauce over them.
  7. Top with remaining cheese.
  8. Bake for 20-25 minutes until bubbly and golden.

Notes

  • For a spicier version, add jalapeños to the shrimp mixture.
  • Can substitute shrimp with chicken or vegetables for a different flavor.
