- 1 pound shrimp, peeled and deveined
- 2 cups sour cream
- 1 cup shredded cheese
- 1 cup enchilada sauce
- 8 corn tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and add shrimp, cooking until pink.
- Stir in garlic powder, onion powder, salt, and pepper.
- In a bowl, mix sour cream and half of the cheese.
- Fill each tortilla with shrimp mixture and a spoonful of the sour cream mixture, then roll them up.
- Place the rolled tortillas in a baking dish and pour enchilada sauce over them.
- Top with remaining cheese.
- Bake for 20-25 minutes until bubbly and golden.
Notes
- For a spicier version, add jalapeños to the shrimp mixture.
- Can substitute shrimp with chicken or vegetables for a different flavor.
