A comforting and creamy white chicken chili made effortlessly in a slow cooker.
Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the white beans, corn, green chilies, onion, garlic, cumin, chili powder, and chicken broth.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Once cooked, shred the chicken with two forks and stir in the heavy cream.
- If desired, add shredded cheese and stir until melted.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier chili, add jalapeños or cayenne pepper.
- This recipe can be made ahead and stored in the refrigerator for up to 3 days.
- Freezes well for up to 3 months.
