Description

A comforting and creamy white chicken chili made effortlessly in a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the white beans, corn, green chilies, onion, garlic, cumin, chili powder, and chicken broth.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4-6 hours.
  5. Once cooked, shred the chicken with two forks and stir in the heavy cream.
  6. If desired, add shredded cheese and stir until melted.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a spicier chili, add jalapeños or cayenne pepper.
  • This recipe can be made ahead and stored in the refrigerator for up to 3 days.
