Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain the peas and place them in a pot with 4 cups of fresh water.
- Bring to a boil, then reduce heat and simmer until tender, about 30-40 minutes.
- In a separate pan, melt the butter and sauté the onion and garlic until translucent.
- Add the cooked black-eyed peas to the onion mixture.
- Stir in the heavy cream, smoked paprika, salt, and pepper.
- Simmer for an additional 10 minutes, stirring occasionally.
- Serve hot, garnished with fresh parsley.
