- 1 lb ground turkey
- 2 cups fresh spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup cream cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and Italian seasoning. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- In a saucepan, combine heavy cream, chicken broth, and cream cheese over medium heat. Stir until the cream cheese is melted and the sauce is smooth.
- Once the meatballs are cooked, add them to the sauce and simmer for an additional 5 minutes.
- Serve warm, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter version, you can use ground chicken instead of turkey.
- Feel free to add more vegetables to the meatball mixture for added nutrition.
