Easy homemade version of the popular Starbucks egg bites that you can enjoy anytime.
Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup diced bell peppers
- 1/4 cup cooked bacon or sausage (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (160°C).
- In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until smooth.
- Stir in the shredded cheese, diced bell peppers, and cooked bacon or sausage if using.
- Grease a muffin tin or use silicone molds.
- Pour the egg mixture into the molds, filling them about 3/4 full.
- Bake for 25-30 minutes or until the egg bites are set and slightly golden on top.
- Let them cool for a few minutes before removing from the molds.
- Enjoy warm or store in the refrigerator for later!
Notes
- These egg bites can be customized with your favorite vegetables and proteins.
- Store leftovers in an airtight container in the fridge for up to 5 days.
- Reheat in the microwave for a quick breakfast option.
