Description

Easy homemade version of the popular Starbucks egg bites that you can enjoy anytime.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup diced bell peppers
  • 1/4 cup cooked bacon or sausage (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Stir in the shredded cheese, diced bell peppers, and cooked bacon or sausage if using.
  4. Grease a muffin tin or use silicone molds.
  5. Pour the egg mixture into the molds, filling them about 3/4 full.
  6. Bake for 25-30 minutes or until the egg bites are set and slightly golden on top.
  7. Let them cool for a few minutes before removing from the molds.
  8. Enjoy warm or store in the refrigerator for later!
