  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add crushed tomatoes and vegetable broth, and bring to a simmer.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Stir in heavy cream and chopped basil.
  7. Season with salt and pepper to taste.
  8. Blend the soup until smooth, if desired.
  9. Serve hot, garnished with additional basil if desired.
