- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the ground turkey over medium heat until fully cooked.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the pumpkin puree, kidney beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and black pepper.
- Bring the mixture to a simmer and let it cook for about 20 minutes, stirring occasionally.
- Stir in the heavy cream and cook for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
