Description

A delicious and creamy pasta dish featuring mushrooms and Tuscan flavors.


Ingredients

  • 8 oz pasta of choice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced onion and sauté until translucent.
  4. Stir in the minced garlic and sliced mushrooms; cook until mushrooms are tender.
  5. Add the cherry tomatoes and spinach; cook until spinach wilts.
  6. Pour in the heavy cream and bring to a simmer.
  7. Stir in the cooked pasta and Parmesan cheese; mix until well combined.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh basil before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Feel free to add protein such as chicken or shrimp.
