- 8 oz pasta of choice
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 16 oz mushrooms, sliced
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the minced garlic and sliced mushrooms; cook until mushrooms are tender.
- Pour in the vegetable broth and bring to a simmer.
- Reduce heat and stir in the heavy cream and spinach; cook until spinach wilts.
- Add the cooked pasta and Parmesan cheese; mix well and season with salt and pepper.
- Garnish with fresh basil before serving.
