Description

A delicious and creamy pasta dish featuring mushrooms and Tuscan flavors, perfect for a quick vegetarian dinner.


Ingredients

Scale
  • 8 oz pasta of choice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 16 oz mushrooms, sliced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced onion and sauté until translucent.
  4. Stir in the minced garlic and sliced mushrooms; cook until mushrooms are tender.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Reduce heat and stir in the heavy cream and spinach; cook until spinach wilts.
  7. Add the cooked pasta and Parmesan cheese; mix well and season with salt and pepper.
  8. Garnish with fresh basil before serving.
