- 8 ounces of pasta (your choice)
- 1 cup of cashews (soaked)
- 1 cup of cherry tomatoes
- 1/2 cup of nutritional yeast
- 2 cloves of garlic
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- Fresh basil (for garnish)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Combine in a blender: soaked cashews, cherry tomatoes, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
- Mix the cooked pasta with the creamy sauce in a large mixing bowl, tossing to coat evenly.
- Serve warm, garnished with fresh basil.
Notes
For the best creaminess, soak cashews for at least 4 hours or overnight. Add greens or other veggies for variations.
