- 1/4 teaspoon black pepper
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- Lemon wedges, for serving

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper in a medium bowl.
- Whisk together Dijon mustard and olive oil in another small bowl until smooth.
- Pat cod fillets dry with paper towels to remove excess moisture.
- Place cod fillets on the prepared baking sheet.
- Brush Dijon mustard mixture over each fillet.
- Sprinkle breadcrumb mixture over each fillet, pressing it down gently.
- Bake for 12-15 minutes, until fish is cooked through and crust is golden brown.
