  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • Lemon wedges, for serving
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper in a medium bowl.
  3. Whisk together Dijon mustard and olive oil in another small bowl until smooth.
  4. Pat cod fillets dry with paper towels to remove excess moisture.
  5. Place cod fillets on the prepared baking sheet.
