Description

A delicious and healthy recipe for crispy baked eggplant, perfect as a side dish or a snack.


Ingredients

  • 2 medium eggplants
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. In a bowl, beat the eggs and season with salt, pepper, garlic powder, and onion powder.
  4. In another bowl, mix the breadcrumbs and Parmesan cheese.
  5. Dip each eggplant slice into the egg mixture, then coat with the breadcrumb mixture.
  6. Place the coated eggplant slices on a baking sheet lined with parchment paper.
  7. Spray the tops with olive oil spray.
  8. Bake for 25-30 minutes or until golden brown and crispy.
  9. Serve warm and enjoy!

Notes

  • For a vegan version, substitute eggs with a flaxseed mixture.
  • Experiment with different seasonings in the breadcrumb mixture for added flavor.
