- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 8 corn tortillas
- Oil for frying
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a bowl, mash the black beans with a fork until mostly smooth.
- Add cumin, chili powder, and salt to the mashed beans and mix well.
- Heat oil in a frying pan over medium heat.
- Place a tortilla in the hot oil and cook for about 30 seconds until it starts to crisp.
- Flip the tortilla and add a spoonful of the black bean mixture to one half of the tortilla.
- Fold the tortilla over and continue to fry until both sides are golden brown and crispy.
- Remove from the pan and drain on paper towels.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- For a spicier kick, add diced jalapeños to the black bean mixture.
- These tacos can be topped with avocado, salsa, or cheese if desired.
