Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onions and bell peppers, sauté until softened.
  3. Stir in shredded chicken and taco seasoning, cook until heated through.
  4. Place a tortilla in the skillet, sprinkle half with cheese, add chicken mixture, and fold the tortilla over.
  5. Cook until golden brown on both sides and cheese is melted.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve hot.
