Description

A refreshing and flavorful dish perfect for spring, featuring crispy lemon chicken served over spaghetti.


Ingredients

  • 8 oz spaghetti
  • 2 chicken breasts, boneless and skinless
  • 1 lemon, zested and juiced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  3. Coat the chicken breasts in the lemon mixture and let marinate for at least 15 minutes.
  4. Heat a skillet over medium-high heat and add the marinated chicken. Cook until golden brown and cooked through, about 6-7 minutes per side.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  6. Toss the cooked spaghetti with the remaining lemon mixture from the bowl.
  7. Serve the spaghetti topped with sliced crispy lemon chicken and garnish with fresh parsley.
