A refreshing and flavorful dish perfect for spring, featuring crispy lemon chicken served over spaghetti.
Ingredients

- 8 oz spaghetti
- 2 chicken breasts, boneless and skinless
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Coat the chicken breasts in the lemon mixture and let marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and add the marinated chicken. Cook until golden brown and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Toss the cooked spaghetti with the remaining lemon mixture from the bowl.
- Serve the spaghetti topped with sliced crispy lemon chicken and garnish with fresh parsley.
