Ingredients

- 2 cups fresh peaches, peeled and diced
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 package egg roll wrappers
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, combine diced peaches, sugar, cinnamon, and lemon juice. Mix well and let sit for 10 minutes.
- Lay an egg roll wrapper on a clean surface, and place a spoonful of the peach mixture in the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
