Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Brown the beef cubes on all sides, then transfer to the crock pot.
  3. Add the carrots, potatoes, onion, and garlic to the crock pot.
  4. In a bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Pour the mixture over the beef and vegetables in the crock pot.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Stir before serving and enjoy your hearty stew!

Notes

  • For a thicker stew, you can add a cornstarch slurry in the last hour of cooking.
