  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 smoked sausage, sliced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 2 bay leaves

Instructions

  1. Rinse the black-eyed peas and soak them overnight in water.
  2. In the Crock Pot, combine the soaked black-eyed peas, rice, onion, garlic, green bell pepper, and smoked sausage.
  3. Add the chicken broth, salt, black pepper, cayenne pepper, and bay leaves to the pot.
  4. Stir the mixture well to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or until the peas and rice are tender.
  6. Remove bay leaves before serving.
