- 1 pound black-eyed peas, dried
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 smoked sausage, sliced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional)
- 2 bay leaves
Instructions
- Rinse the black-eyed peas and soak them overnight in water.
- In the Crock Pot, combine the soaked black-eyed peas, rice, onion, garlic, green bell pepper, and smoked sausage.
- Add the chicken broth, salt, black pepper, cayenne pepper, and bay leaves to the pot.
- Stir the mixture well to combine all ingredients.
- Cover and cook on low for 6-8 hours or until the peas and rice are tender.
- Remove bay leaves before serving.
Notes
- This dish is traditionally served on New Year’s Day for good luck.
- Feel free to add other vegetables or spices to customize the flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
