Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 2 cups elbow macaroni
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet and sauté until softened.
- Transfer the beef mixture to the crockpot.
- Add the kidney beans, black beans, diced tomatoes, beef broth, elbow macaroni, chili powder, cumin, salt, and pepper to the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, stir in the shredded cheese if using.
- Serve hot and enjoy your comforting meal!
Notes
- Feel free to add more vegetables like bell peppers or corn for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
- Leftovers can be frozen for up to 2 months.
