Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until softened.
  3. Transfer the beef mixture to the crockpot.
  4. Add the kidney beans, black beans, diced tomatoes, beef broth, elbow macaroni, chili powder, cumin, salt, and pepper to the crockpot.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. In the last 30 minutes of cooking, stir in the shredded cheese if using.
  8. Serve hot and enjoy your comforting meal!

  • Feel free to add more vegetables like bell peppers or corn for extra flavor.
