A delicious and easy recipe for a creamy and flavorful chicken chili made in a crockpot.

- 2 pounds boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 block (8 oz) cream cheese
- 1 cup chicken broth
- 1 cup shredded cheese (optional for topping)
- Fresh cilantro for garnish (optional)
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the cream cheese to the crockpot and stir until melted and combined.
- Shred the chicken with two forks and mix everything together.
- Serve hot, topped with shredded cheese and fresh cilantro if desired.
Notes
- For a spicier chili, add jalapeños or hot sauce.
- This recipe can be made ahead of time and stored in the refrigerator for up to 3 days.
- Leftovers can be frozen for up to 3 months.
