Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 block (8 oz) cream cheese
  • 1 cup chicken broth
  • 1 cup shredded cheese (optional for topping)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the cream cheese to the crockpot and stir until melted and combined.
  5. Shred the chicken with two forks and mix everything together.
  6. Serve hot, topped with shredded cheese and fresh cilantro if desired.

Notes

  • For a spicier chili, add jalapeños or hot sauce.
  • This recipe can be made ahead of time and stored in the refrigerator for up to 3 days.
