- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 1 onion, sliced
- 2 cups beef broth
- 1 packet French onion soup mix
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the sliced onions at the bottom of the crockpot.
- Arrange the meatballs on top of the onions.
- In a separate bowl, mix the beef broth and French onion soup mix, then pour over the meatballs.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot, garnished with additional parsley if desired.
Notes
- For a richer flavor, consider adding a splash of red wine to the broth.
- These meatballs can be served over pasta or with crusty bread.
