Description

A delicious and easy recipe for garlic parmesan chicken and potatoes made in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the halved baby potatoes on top of the chicken.
  3. In a bowl, mix together the melted butter, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Pour the mixture over the chicken and potatoes in the crockpot.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  6. Garnish with fresh parsley before serving.

Notes

  • For a creamier sauce, add a splash of heavy cream before serving.
  • Feel free to add other vegetables like carrots or green beans.
