- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cups shredded cheese
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Drain excess fat and transfer the beef to the crockpot.
- Add black beans, corn, diced tomatoes, bell peppers, onions, taco seasoning, salt, and pepper to the crockpot.
- Stir all ingredients until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle shredded cheese on top and cover until melted.
Notes
- Feel free to add any leftover vegetables you have on hand.
- This dish can be made vegetarian by omitting the ground beef and adding more beans.
- Serve with tortilla chips or over rice for a complete meal.
