Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups shredded cheese
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Drain excess fat and transfer the beef to the crockpot.
  3. Add black beans, corn, diced tomatoes, bell peppers, onions, taco seasoning, salt, and pepper to the crockpot.
  4. Stir all ingredients until well combined.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle shredded cheese on top and cover until melted.

Notes

  • Feel free to add any leftover vegetables you have on hand.
  • This dish can be made vegetarian by omitting the ground beef and adding more beans.
  • Serve with tortilla chips or over rice for a complete meal.
