Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the white beans, corn, green chilies, onion, garlic, cumin, chili powder, and chicken broth on top of the chicken.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir in the sour cream.
  6. Serve hot, topped with shredded cheese if desired.

Notes

  • For a spicier chili, add jalapeños or cayenne pepper.
  • This recipe can be made ahead of time and stored in the refrigerator for up to 3 days.
