Ingredients

  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans)
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, nuts, and salt.
  3. In a small saucepan, melt the coconut oil and honey (or maple syrup) over low heat, then stir in the vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix well until everything is evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely before adding the dried fruit.
  8. Once cooled, break into clusters and store in an airtight container.
