- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1 cup mini chocolate eggs, for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix chocolate cookie crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese, sugar, and vanilla until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and chocolate chips until evenly distributed.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
- Before serving, top with mini chocolate eggs for decoration.
Notes
- For a richer flavor, use dark chocolate chips.
- Ensure all ingredients are at room temperature before mixing.
