Description

A traditional Irish dish perfect for celebrating St. Patrick’s Day, Dublin Coddle is a hearty one-pot meal featuring sausages, bacon, and potatoes.


Ingredients

Scale
  • 4 Irish sausages
  • 4 slices of bacon
  • 4 large potatoes, peeled and sliced
  • 2 onions, sliced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. In the same pot, brown the sausages on all sides.
  3. Add the sliced onions and cook until softened.
  4. Layer the sliced potatoes over the sausages and onions.
  5. Pour in the chicken broth and add thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the potatoes are tender.
  7. Serve hot, garnished with the crispy bacon.
