Description

A classic French dish made from mashed potatoes, shaped into elegant rosettes and baked until golden.


Ingredients

  • 2 pounds of potatoes
  • 4 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 2 large egg yolks
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 teaspoon of nutmeg (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the potatoes into chunks, then boil them in salted water until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add butter, heavy cream, egg yolks, salt, pepper, and nutmeg to the potatoes.
  5. Mash the mixture until smooth and creamy.
  6. Transfer the potato mixture to a piping bag fitted with a star tip.
  7. Pipe the potatoes onto a baking sheet in rosette shapes.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown.

  • For a richer flavor, you can add grated cheese to the potato mixture.
