Deliciously rich chocolate cookies, perfect for celebrating Easter with family and friends.
Ingredients

- 160 g Unsalted butter
- 100 g White caster sugar
- 150 g Light brown sugar
- 1 medium Egg (at room temperature)
- 1 medium Egg yolk (at room temperature)
- 1 tsp Vanilla extract
- 280 g Self-raising flour
- 0.5 tsp Salt
- 200 g Chocolate (either milk, white or a mix of both)
- 12 Mini Malteser Bunnies (either milk, white or a mix of both)
- 12 Mini Eggs (roughly one sharing bag)
Instructions
- Preheat your oven to 180°C (350°F).
- Line a baking tray with parchment paper to keep your cookies from sticking.
- Beat the unsalted butter, white caster sugar, and light brown sugar together in a bowl until light and fluffy.
- Add the medium egg and medium egg yolk to the mix, followed by the vanilla extract. Continue beating until well combined.
- Sift the self-raising flour and salt together, then gradually fold into the butter mixture.
- Chop the chocolate into chunks if using a bar, then add it to the cookie dough.
- Gently mix in the Mini Malteser Bunnies and Mini Eggs until evenly distributed.
- Scoop tablespoons of dough and roll them into balls, placing them onto the prepared baking tray.
- Space the cookie balls evenly to allow for spreading during baking.
- Bake in the preheated oven for 10-12 minutes until lightly golden brown around the edges.
- Remove from the oven and allow to cool on the tray for a few minutes before transferring to a wire rack.
Notes
For a firmer dough, use chilled butter. Chill the dough for 30 minutes before baking for an even chewier texture.
